(2) 1 lb. pork tenderloins
2 Tbsp. olive oil
3 Tbsp. Caribbean Cocoa Seasoning Blend
2 tsp. kosher salt
2 cups chicken broth
1 medium onion, sliced
Non-stick cooking spray
1 mango, peeled and diced
2 plum tomatoes, seeded and diced
1/2 cup cilantro, chopped
Salt and pepper, to taste
Combine Caribbean Cocoa Seasoning blend with olive oil. Rub pork loins with oil and spice mixture then let sit for 3-5 minutes.
Heat a grill pan over medium heat. Coat pan with cooking spray, then add pork to pan. Grill 2-3 minutes on each side.
Line bottom of slow cooker with onions, tomatoes, mangoes and cilantro then place pork loins on top. Add chicken broth.
Cook on LOW for 4-5 hours or until pork is fork tender.
