Minestrone Soup with Cocoa Roma Sauce

Our Minestrone soup makes a great mid-week dinner when paired with our Cocoa Rub Garlic Bread and Caramel Apple Cake (see separate recipe). Sit back and listen for the ummmm.

Minestrone SoupIngredients:

  • 1 clove garlic, minced
  • 2 Tbs. Olive oil
  • 1 cup Dove Chocolate Discoveries Cocoa Roma Sauce
  • 5 cups water
  • 2 cups frozen vegetables
  • 1 can red beans, drained and rinsed
  • 1 cup small pasta, like Ditalini or Orzo
  • Grated Parmesan Cheese


  • In a large pot add the garlic and olive oil.
  • Saute the garlic till fragrant and softened.
  • Add the Cocoa Roma Sauce and water and wait for it to simmer.
  • Add the frozen vegetables, beans and pasta.
  • Cook until pasta is done.
  • Sprinkle grated cheese on top, serve.

    Crusty Garlic Bread with Cocoa Rub


    • 1 loaf of Italian bread
    • 1 stick margarine or butter
    • 2 Tbls. Sweet n’ Spicy Cocoa Rub
    • Grated Parmesan Cheese


    • Slice bread lengthwise.
    • In a large skillet, melt butter and add rub.
    • When butter is melted and butter and rub are combined dip bread and soak bread with butter mixture. Place under broiler for a few minutes until browned.
    • Sprinkle grated cheese on stop, serve.
