Dark Chocolate Red Wine Baked Beans
Two 16 oz. cans great northern beans, drained
1/2 cup chopped yellow onions
¼ cup. brown sugar
1 Tbsp. prepared mustard
½ cup water
1 cup DCD Dark Chocolate Red Wine Cooking Sauce
2 Tbsp. DCD Sweet ‘N’ Spicy Cocoa Rub
Springs of thyme
Sour cream, for garnish, optional
1. Preheat oven to 350° F.
2. Mix all ingredients in a small greased casserole dish.
3. Bake for 1-1½ hours, until sauce has thickened. Serve in small bowls with a small spring of thyme and sour cream, if desired.
Cocoa Spiced Corn
¼ cup mayonnaise
3 tablespoons sour cream
Juice from ½ lime
¼ teaspoon salt
2-3 teaspoons DCD Sweet ‘n’ Spicy Cocoa Rub, plus additional for garnish
¾ cup crumbled cotija or feta cheese
6 ears of corn, husks and silk removed, cut in half
- Stir together the mayonnaise, lime juice, salt and Cocoa Rub. Place the cheese in a shallow dish that is at least as long as the corn. Set aside.
- Preheat grill to high and grill corn, turning every 2-3 minutes, until tender and slightly charred, usually 10-12 minutes. Let cool.
