Cocoa Spiced Butternut Bisque

butternutbisqueThis velvety soup gets spiced up with a cocoa kick!

2 Tbsp Olive Oil
1 Large Onion, Diced
2 Tbsp DCD Cocoa Spice Rub
6 Cups Butternut Squash, cubed
4 Cups Chicken or Vegetable Stock
½ Cup Heavy Cream
Salt, to taste
½ Cup Sour Cream (garnish)

  • In a large pot over medium heat, sauté the onions and oil until translucent
  • Add the DCD Cocoa Spice Rub to the onions and sauté for 2 minutes
  • Pour in the stock and squash, simmer until the squash is tender
  • Puree the warm soup in a blender until smooth, add in the heavy cream and salt
  • Serve with a dollop of sour cream and a sprinkling of DCD Cocoa rub
