Cocoa-Spiced Grilled Corn

¼ cup mayonnaise

3 tablespoons sour cream

Juice from ½ lime

¼ teaspoon salt

2-3 teaspoons DCD Sweet ‘n’ Spicy Cocoa Rub, plus additional for garnish

¾ cup crumbled cotija or feta cheese

6 ears of corn, husks and silk removed, cut in half


1. Stir together the mayonnaise, lime juice, salt and Cocoa Rub. Place the cheese in a shallow dish that is at least as long as the corn. Set aside.

2. Preheat grill to high and grill corn, turning every 2-3 minutes, until tender and slightly charred, usually 10-12 minutes. Let cool.

3. Brush corn with cocoa rub mixture, and roll in cheese to coat. Sprinkle with additional Cocoa Rub to garnish (if desired). Serve with lime wedges.
